Preparation
- Sirloin/Ribeye/Fillet (cut to about 1.5 inches or 3.8 cm thick)
- Paper towels/Clean towels
- Coarse sea salt, black pepper

Doneness Levels
According to the USDA’s minimum internal temperature standards, beef should be heated to 62.8°C (145°F) and left to rest for at least 3 minutes. Please select the doneness according to your preferences.
- Rare
Cool red center
52°C (125°F) - Medium Rare
Warm red center
57°C (135°F) - Medium
Warm pink center
63°C (145°F) - Medium Well
Slightly pink center
66°C (150°F) - Well Done
Little or no pink center
71°C (160°F)
Step 1: Prepare the Ingredients
- Take the beef out of the refrigerator in advance to thaw at room temperature. You don’t want to grill frozen beef, as the center will require extra heat to thaw, and by the time the center reaches the desired doneness, the exterior will have become too tough.
- Pat the surface of the beef dry with paper towels or a clean towel. This will help the seasoning adhere better to the beef and result in better marination.
- Season the beef with coarse sea salt and black pepper, evenly covering the surface and pressing it into the meat.

Step 2: Grilling
- Place a probe clip on the grill and use one probe to monitor the grill temperature. Keep the grill temperature around 500°F (260°C). The high heat will form a crispy crust on the outside while keeping the interior tender.
- Insert another probe into the center of the beef and select the beef mode and your preferred doneness level.
- Place the beef on the grill and press it slightly to ensure full contact with the grill. You should hear a sizzling sound – if not, your grill is not hot enough.
- Close the grill lid and wait for about 2-3 minutes. Then, open the grill to check if there are nice grill marks on the bottom of the beef.
- Flip the beef, close the lid, and wait for the app/thermometer to alert you.
- Once the alert sounds, remove the beef from the grill and let it rest for at least 3 minutes.
During the resting period, the temperature will continue to rise by about 5°C (10°F). It’s recommended to use the pre-alert function for best results.
