Preparation

  • Fresh fish (recommended over frozen, as frozen fish can have a mushy texture)
  • Salt and pepper for seasoning, plus melted butter or olive oil for brushing

Steps

  1. Preheat the grill. Place the probe clip on the grill and use one probe to monitor the grill temperature, aiming for 400-450°F (204-232°C). Preheating the grill has multiple benefits: it caramelizes the fish, creates grill marks, and adds that smoky, rich barbecue flavor. It also shortens cooking time, reduces the risk of the fish drying out, and minimizes sticking.
  2. Insert the second probe into the center of the fish and select the fish mode in the preset temp. According to USDA guidelines, fish should be cooked to a safe internal temperature of 145°F (62.8°C).
  3. Oil the grill grates, then place the fish on the grill, skin-side down, to achieve grill marks and aid flipping. Brushing oil on the fish skin helps prevent sticking and adds a crispy texture.
  4. After 3-5 minutes, flip the fish once. Avoid flipping multiple times, as this increases the chance of the fish breaking apart.
  5. Wait for the BMT01 or app alert, then remove the fish and let it rest for 3-5 minutes to allow the juices to redistribute, enhancing tenderness.
