Doneness Levels
According to USDA safety standards, lamb should be cooked to a minimum internal temperature of 62.8°C (145°F) and rested for at least 3 minutes. Choose your desired doneness based on the following guidelines:
- Rare: 60°C (140°F)
- Medium Rare: 63°C (145°F)
- Medium: 71°C (160°F)
- Medium Well: 74°C (165°F)
- Well Done: 77°C (170°F)
Step 1: Prepare the Ingredients
- If your lamb chops are frozen, fully thaw them at room temperature.
- Pat the surface of the meat dry with paper towels.
- Rub the surface of the lamb with oil, then season with salt and your preferred spices. As a flavorful meat, lamb can handle stronger seasonings.

Step 2: Grilling
- Place a probe clip on the grill to monitor the grill temperature, aiming for 177-232°C (350-450°F).
- Lightly oil the grill grate to prevent sticking.
- Insert the probe into the lamb chop, avoiding the bone. Select the desired doneness in App.
- Place the lamb on the grill grate, cover the grill, and flip the chops after 3-5 minutes.
- Once the BMT01 or eWeLink App alerts you, remove the lamb chops and let them rest for about 5 minutes before slicing and serving.
*Note: The internal temperature will continue to rise by about 5°C (10°F) during resting, so consider using the Temp. Pre-alert alert feature.
