Preparation

  • Chicken (15 lbs as an example), with neck and giblets removed
  • Softened butter
  • BBQ rub or salt and pepper
  • Aluminum foil pan
  • SONOFF BMT01 BBQ Meat Thermometer

Step 1: Grilling

  1. Push the charcoal to the sides of the grill, placing an aluminum foil pan in the center to catch drippings from the chicken.
  2. Place the probe clip on the grill grate and place one probe in it. Cover the grill and preheat to 350-425°F (177-218°C). If the temperature isn’t sufficient, add more charcoal, as high heat is key for a beautifully browned chicken.
  3. Insert another probe into the thigh or breast of the chicken. If you have more probes, it’s best to insert one in both the thigh and breast to avoid undercooked meat.
  4. Oil the grill grate to prevent sticking, then place the chicken directly above the aluminum foil pan. Maintain the grill temperature at 350-425°F (177-218°C) until the chicken reaches an internal temperature of at least 165°F (74°C).
  5. Remove the chicken from the grill and let it rest for at least 20 minutes. This step allows the juices to redistribute within the meat, resulting in a juicier chicken.
